Hello Fall!

Today is an absolutely beautiful day! I have had the windows open all morning enjoying the cool breeze flowing through my house! I love this time of year!  As this fall season begins, I always find myself getting so excited for what’s to come – cool weather, pumpkin patches, baking, holidays… These next few months are my favorite! I have put out some fall decor around my house, which always seems to make it extra cozy, but what really did it was what I baked up yesterday…Iced Pumpkin Raisin Cookies! Y-to the- UM!! My step sis passed this recipe on to me and I was so excited to try it! They could not be more perfect! I am going to share the recipe in case you feel the need for a little more yummy fall in your house! :)

Iced Pumpkin Raisin Cookies

1 stick of butter, softened
1 c. sugar
1 c. pumpkin puree
1 t. ground cinnamon
1 t. vanilla extract
1/2 t. fresh ground nutmeg
1/2 t. ground cloves
1 1/2 t. fresh squeezed lemon juice (save rest of juice and zest for icing)
1 1/2 t. fresh squeezed orange juice (save rest of juice and zest for icing)
2 c. all-purpose flour
1 t. baking soda
1 t. baking powder
1 t. salt
1 c. raisins

In a medium bowl, mix the flour, salt, baking soda, and baking powder and set aside. In a separate bowl, beat the rest of the ingredients with an electric mixer just until smooth. Slowly add the flour mixture to the bowl and beat just until combined. Stir in the raisins.

Drop by spoonfuls on a greased cookie sheet and bake at 375 degrees for about 12-15 minutes. (Since oven temps vary, time may be more or less. My sister’s oven only took 8-10 minutes, mine took about 15. Just keep an eye on them.)

While the cookies are baking, prepare the icing :) In a medium bowl, stir together 1 1/2 c. powdered sugar, 1 t. vanilla, leftover juice from lemon and orange, and some zest from the lemon and orange. You can make this whatever consistency you prefer by adding more or less juice. I prefer it more like a glaze, so I keep it on the runnier side.

After the cookies are done baking, let them sit on the baking sheet for a minute, then remove them to a wire rack and allow to cool. Once cookies have cooled completely, spoon the icing over the cookies and allow to harden. Lastly, enjoy the wonderful deliciousness of fall!! :)

Quick update… We are an Aunt and Uncle…again! :)

John and Janelle had their little man last night! Tanner Michael Miller!  7lbs 13 oz. 20 1/2 inches. Can’t wait to meet him!

Makes me think about cute, adorable, cuddly newborns….

Did I mention it would be crazy

Yeah, so I am still here. It’s was November 3rd the last time I blogged. Today is January 7th. Just kidding…it’s the 8th. Well, like I forecasted, these past few weeks have been crazy! Yes, we moved into our house, yes we survived Thanksgiving, Riley’s FIRST birthday party, and Christmas! (and two visits from Stephen’s parents thrown in there. The first being the day after we moved into our house! Can I  say chaos!?!) But it is wonderful :) Life is easy again. For now, until it’s not.  I still have loads and loads of decorating to do. Being so close to Christmas when we moved in, we just went ahead and did our Christmas decorating pretty much right away. So now that decorations are back in hiding until next year, I can see that my house still needs mucho work. 

To show off all my hard work in planning, decorating, cooking, and hosting Riley’s party…here are some pics :) 

So…that was December 19th. The day my little man turned ONE! The party turned out great! For food I made a traditional chili and a white chicken chili…which, if I do say so myself, were wonderful! Riley thoroughly enjoyed his first encounter with sugar!! I made him a giant cupcake that was carrot cake and the frosting I made was a sugar free cream cheese frosting. He liked it a lot! There were about 20 people total! Great friends and loving family :) It really was a wonderful day! 

I could post some Christmas pictures…but I’m not so much in the mood right now. I’ll save that for another day!

random rambling…

Sometimes I feel like my heart and mind are so full and that I could fill pages and pages with my thoughts.  Then there are times when I have to try so hard to think of one thing to say.  Right now I am feeling the latter.  Life is really good right now.  Really.  I wasn’t sure how I would feel, still living with my parents, but it really is not that bad.  Sure, it’s not anything like living in my own house with my own space, but it really is nice to be with family.  After living in Tampa for 2 1/2 years with no one close by, it is wonderful to be with family again.  Sometimes I dream about my own kitchen…but that will happen soon enough.  Still in the process of house hunting.  We just got pre-approved, so now we just need to find our “dream” first home.  :) We decided that we are going to be looking for more of a fixer-upper so that we can put to use our HGTV renovation skills! :)  

Riley had his 6 month appointment yesterday.  He weighed in at 19lbs 8 oz. 27 inches long. My little man :) He is so cute. Seriously. Probably one of the cutest ever…but I think I might be a little biased.

Well, I guess that is all I have to say.  Actually, my sis and nephews are heading to Ohio tomorrow, and I am pretty sad!  They will be gone for about a month! :( Not looking forward to that! Who are we going to play with everyday!

nap time

Riley is taking his afternoon nap right now…so I figured I’d write a little something.  We just got back from Georgia Tuesday nite.  We had a great time! The weather was absolutely gorgeous! Being there makes me realize how much I want to live there (or near there,  North Carolina or Tennessee.)  The scenery is absolutely breathtaking!!  I would feel so blessed to wake up to that every morning.  But then again…I love the beaches and living near them.  We’ll see.

The first full day we were there, we went to downtown Carrollton.  What a cute little place! I love quaint downtowns.  We walked around…and shopped :) The had such cute baby boutiques.  One was called the Funky Monkey.  The clothes were adorable!! Riley got some new additions to his wardrobe thanks to his Nana :) too expensive for me…  We had a great time! Riley got to meet his cousin Tiffany who is 10 months.  She is a doll! The trip was short but sweet.  We got there Friday nite and left Tuesday morning.  We had a great time though.  It is always nice to come home, though.  I love being home.  However, I am looking forward to another vacation! :)


trip to see the fam

i am very excited! we are going to cape coral tonite to see my fam! the main reason we are going is for a wedding on Saturday nite…but Stephen worked out his schedule so that we can be down there until Monday nite! it is always nice to get to see them!

we are also going to try to meet up with some friends!  finally! usually our trips down are so short, it’s hard to try to fit friends in!

well, i must get packing.  Riley is taking his afternoon nap, and this is probably my best chance to do it!
