frisbee, bread, and good times.

What a fun past couple of days! This beautiful weather always puts me in such a good mood! My house has been completely open for the past 4 days, and I love it! Open windows and fresh air do the body and soul so good! Riley loves it too because it means lots of outdoor time :) He has been in his “box” as he calls it {sandbox} like 24/7 and Stephen and I have been able to play lots of frisbee. However, I do have to tell this…the first night we were outside in the backyard playing frisbee and Riley was playing in his sandbox, there was a sad and unfortunate event… So Stephen and I are pretty good at frisbee. We throw it hard and fast. So there was my poor little guy sitting in his sandbox so innocently having fun digging and what not, then all of the sudden out of no-where, he gets creamed right in the middle of his eyes with the frisbee. (Stephen had thrown it, not me! :) Just had to make that clear. Although I guess that means it’s kinda my fault too because I should have caught it, even though it was way out of the way.)  He took it like a champ, though! It just, obviously, caught him by surprise. But he was fine :) And just a little bruise on the bridge of his nose.

Haha, this was the next night! :) He was making sure it didn’t happen again!

 

So, in other news, I have {successfully} attempted making my first loaf of bread. :) I have made many banana and pumpkin breads…but never like a “sandwich” bread before. I made a whole wheat loaf, and it came out delicious! :) It was super easy and took no time at all, so I plan on trying to eliminate the need for buying bread and just stick to making this! I mean, it’s not a “huge” savings. I usually spend anywhere from $1.60 – $2.50 for a loaf of Arnolds 100% Whole Wheat. This probably cost me like $.50 to make…if even that. But it was fun! And I like knowing that what I make has no preservatives and no extra junk. I know exactly what is going into my bread, and that makes me feel better! If you want to give it a try, go for it! It’s fun and fulfilling :) I found the recipe on my favorite blog to read…Money Saving Mom. Love her and all her tips and tricks! You can find the recipe for the bread here.

Well, today is a packed day. I had our Women’s Ministry Brunch at church this morning while Stephen, Riley, Corey, and Addison went to the library. When Riley wakes up from his nap (which will probably be sooner than later since the twirp has only been doing about 1 1/2 hour naps the past few days. I am getting a taste of the “two’s” already!) we are heading downtown Cape for a Columbus Day/ Italian Fest parade with my mom, sis, and nephews, then heading to my mom’s church for a talent show and dinner. I love days like this :) As stressful as it can sometimes be, I love having people to see and places to go :) I do also love a nice, slow, quiet day though, too! :)

Oh my goodness, sidenote! I fell in love last night! My bestest, Kristen, decided we were due for a grown up girls night :) She treated me to dinner and Life As We Know It at Silverspot in Naples. I will never watch a movie any other way! Talk about glamourous! Not only does it look nothing like a normal, cheesy theatre, you get to reserve your seats online before you go, AND every seat is a like a leather recliner that you can just sink into (with no annoying bottom part of the seat popping up on you when you stand up!) I have a track record of falling asleep in movies, and this makes it very tempting, but I stayed awake the whole time! :) The movie was super cute! Definitely cried a few times and had to glance a few times at pictures of Riley, but it was a happy movie and made me smile :)  But the LOVE is from the restaurant we ate at…Bravo! Cucina Italiana!  De-li-cious!! Oh my goodness. I am Italian. I love good food…and this is it!  I am already planning a date night with Stephen to head down there so he can experience heaven!

Top Ten Tuesday

Okay, it is officially Tuesday so I am continuing with my top ten :)

This week I am going to list the top ten things I want to accomplish {in the near future}…in no particular order. So here goes…

1. Learn to use a sewing machine (and I guess that would include getting one).
2. Find the perfect way to organize all my recipes.
3. Meal-plan more faithfully.
4. Start Riley’s scrapbook.
5. Renovate something old.
6. Get rid of junk (craigslist, ebay, or goodwill)
7. Do one random act of kindness to a stranger.
8. Budget!
9. Organize my bathroom.
10. Decide on a paint color for our house.

Wow! That was harder than I thought it would be! Hopefully I will be able to start getting these crossed off! I’m sure the list will just keep getting longer and longer. Wish me luck!

Hello Fall!

Today is an absolutely beautiful day! I have had the windows open all morning enjoying the cool breeze flowing through my house! I love this time of year!  As this fall season begins, I always find myself getting so excited for what’s to come – cool weather, pumpkin patches, baking, holidays… These next few months are my favorite! I have put out some fall decor around my house, which always seems to make it extra cozy, but what really did it was what I baked up yesterday…Iced Pumpkin Raisin Cookies! Y-to the- UM!! My step sis passed this recipe on to me and I was so excited to try it! They could not be more perfect! I am going to share the recipe in case you feel the need for a little more yummy fall in your house! :)

Iced Pumpkin Raisin Cookies

1 stick of butter, softened
1 c. sugar
1 c. pumpkin puree
1 t. ground cinnamon
1 t. vanilla extract
1/2 t. fresh ground nutmeg
1/2 t. ground cloves
1 1/2 t. fresh squeezed lemon juice (save rest of juice and zest for icing)
1 1/2 t. fresh squeezed orange juice (save rest of juice and zest for icing)
2 c. all-purpose flour
1 t. baking soda
1 t. baking powder
1 t. salt
1 c. raisins

In a medium bowl, mix the flour, salt, baking soda, and baking powder and set aside. In a separate bowl, beat the rest of the ingredients with an electric mixer just until smooth. Slowly add the flour mixture to the bowl and beat just until combined. Stir in the raisins.

Drop by spoonfuls on a greased cookie sheet and bake at 375 degrees for about 12-15 minutes. (Since oven temps vary, time may be more or less. My sister’s oven only took 8-10 minutes, mine took about 15. Just keep an eye on them.)

While the cookies are baking, prepare the icing :) In a medium bowl, stir together 1 1/2 c. powdered sugar, 1 t. vanilla, leftover juice from lemon and orange, and some zest from the lemon and orange. You can make this whatever consistency you prefer by adding more or less juice. I prefer it more like a glaze, so I keep it on the runnier side.

After the cookies are done baking, let them sit on the baking sheet for a minute, then remove them to a wire rack and allow to cool. Once cookies have cooled completely, spoon the icing over the cookies and allow to harden. Lastly, enjoy the wonderful deliciousness of fall!! :)

some making and baking (and, of course, saving)

So I will start this out with my deal today :)

I made a quick trip into Walgreens to get some goods. They had Soft Scrub on sale BOGO…and I just happened to have (2) BOGO Soft Scrub coupons…which would make all four of the bottles free (have to remember tax though) :) So, my end result was 4 bottles of Soft Scrub for a grand total of $ .48. Making them only $ .12 a bottle! :) My total savings were $15.96. Gotta love a deal! :)

In other news…I am proud to say that I finally made my very first diaper cake! Woohoo! I have been waiting for a baby shower (heehee) so that I could try my hand at it. So I was happy when I received an invite for a shower for a girl from my church! I was a little nervous in taking on this task. I have only seen two in my life – the one my sister-in-law made for me and the one she made for my other sister-in-law (who just happened to have the most adorable little guy, Tanner! We got to visit them yesterday, and I loved every minute of snuggling with him! Although Riley wasn’t too fond of it!) :) But anyway…I had been looking at all different websites, and I could not find any kind of “how-to’s” for the type I wanted to make. There is an easier version, but I just don’t like the way it looks compared to the way I wanted to make it. So after talking to my sis-in-law, I kinda felt somewhat comfortable with going at it. So, as soon as Riley went down for his nap, I started. And, I am glad to say, it was a piece of cake! Haha, no pun intended ;) After some help from my wonderful and surprisingly creative step-dad, we pulled it all together! He helped me figure out some of the technical details. After all the hot-glueing and taping and decorating, I was in awe of how beautiful it was! :) Even now, I can’t stop looking at it!  And the best part, I had so much fun doing it! I really might consider trying to make these to sell!  The whole reason my sis-in-law got into making them (although she doesn’t sell them, just makes them for gifts) is because she saw one in a boutique and they wanted like $125 for it! She thought, “gosh, I can make that!” So she did!  I love making them! (So I am secretly waiting for lots of lots of baby showers!) :) If I could sell them that would be awesome! So..I will post a pic of my very first (and what I think is adorable) diaper cake! :)

Now to the baking part…

For the shower I am attending tomorrow morning, I offered to make a Blueberry Crumb Coffee Cake! Doesn’t that sound delicious!? It’s Ina Garten’s recipe…so I’m sure it’s going to be delish! So here it is, 11:30 pm and I am still baking it! There’s nothing like waiting until the last minute, huh? Well, so at 9:45 I decided I wanted to use a certain pan, a 9″ springform pan, but I didn’t have one. So I call our Neighborhood Walmart to see if they carry them. Nope. So I say to Stephen, “Can I make it to Target?” He looked at me like I was kinda crazy, then said, “Go! I’ll call them to tell them to wait for you!” I jump in my car, speed down the road, and almost get into an accident. But hey! I need THIS pan! I pull into the Target parking lot, the guy locking the doors gives me the thumbs-up, and I run inside. He asked if I knew where it was and I said yes. I then proceed to run through the store. Yes, run. I have my loud sandals on so my feet are clapping against the ground with every step. I find the pan and hear on the walkie “the girl with the pan is here!” I then proceed to run back through the store to the register. I pass an employee and as I run by her she says into her walkie “she’s on her way to the register.” Haha, I feel like I’m on some kind of obstacle course or something. I get to the register, pay for my pan, and run to the door. I graciously thank the manager who let me slip in, and he smiled and said “Happy Baking!” That put a smile on my face! :)  My crumb cake is happily baking away in the oven and smelling deliciously tempting! So…that is my wonderful baking story! :) Fingers-crossed it turns out okay!
